Ingredients

  • 6 strips thick cut bacon
  • 2 TBSP flour
  • 1 large onion
  • 5 cups spinach, destemmed, roughly chopped
  • 4 cloves garlic
  • 1 bag of frozen hash browns (30 ounces)
  • 1 pound ground sausage
  • 4 cups chicken broth
  • Salt/pepper
  • 1 cup heavy whipping cream
  • Italian seasoning
  • 2 TBSP butter
  • Red pepper flakes
  • 2 TBSP parmesan

Instructions

  1. In a large skillet, brown ground sausage.
  2. In a separate pan, cook bacon and set aside, saving fat.
  3. Using bacon fat, saute roughly chopped onions and garlic.
  4. Add onions and garlic into ground sausage and add red pepper flakes, salt, pepper, and Italian seasoning.
  5. Add sausage, onions, and garlic into the crockpot with potatoes and chicken broth. Stir to combine.
  6. Cook on low for 5.5 hours.
  7. One hour prior to completion, stir in the flour until fully combined.
  8. Add in chopped spinach, cream, butter, bacon, and parmesan.
  9. Finish cooking, stir frequently.
  10. Serve with extra cheese or bread.
