Ingredients

  • 1 1/2 cups white sugar
  • 2 TBSP butter
  • 2 TBSP flour
  • 4 eggs, separated
  • 1/4 tsp salt
  • 3 TBSP cornstarch
  • 1 1/2 cups water
  • 1 9-inch pie crust, baked
  • 2 lemons

Instructions

  1. Prepare and bake pie crust as directed, set aside.
  2. Preheat the oven to 325 F.
  3. Whisk 1 cup of the white sugar, flour, cornstarch, and salt in a saucepan.
  4. Slowly stir in lemon juice and zest.
  5. Cook over medium-high heat until it comes to a boil. Then stir in the butter until melted.
  6. Slowly add sugar mixture, while whisking, to 4 egg yolks.
  7. Bring back to a boil and stir until thick, then remove from heat.
  8. Pour mixture into the pie shell and set aside.
  9. Using the KitchenAid, beat the egg whites until foamy.
  10. Slowly and gradually add white sugar. Beat until stiff peaks form.
  11. Spread the meringue over the pie and make it pretty.
  12. Bake the pie for 20-25 minutes, or until golden brown.
  13. Cool in the fridge.
