Ingredients

  • 5-6 mini cucumbers
  • 3 tablespoons salt
  • 3 tablespoons gochugaru
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • Dash of sesame oil

Instructions

  1. Slice cucumbers into coins
  2. Put cucumbers into a bowl or jar and coat the coins in the salt
  3. Toss the cucumbers until fully coated in salt
  4. Let the coins soak up the salt for 15 minutes
  5. Rinse the cucumbers fully and pat dry
  6. Add honey, gochugaru, rice vinegar, and sesame oil to jars or bowls
  7. Fully mix and toss to coat the cucumbers
  8. Adjust ingredients as needed and refrigerate
