Ingredients
1 cup whole almonds
1 cup whole pecans
1 cup whole walnuts
1 espresso shot (~2.5 oz)
1/2 cup maple syrup
1/2 TBSP pure vanilla extract
1/8 tsp cinnamon
2 TBSP coconut oil
Instructions
Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper or a non-stick mat.
Whisk together espresso, maple syrup, vanilla, cinnamon, and coconut oil.
Toss nuts in the glaze and let rest for 10 minutes.
Using a slotted spoon, transfer nuts to the prepared pan in a single layer. Drizzle remaining glaze on top.
Bake for 10 minutes, then stir gently and return to oven for another 7-10 minutes until toasted.
Cool completely before serving. Store in an airtight container.
