Espresso Glazed Nuts

Ingredients

  • 1 cup whole almonds
  • 1 cup whole pecans
  • 1 cup whole walnuts
  • 1 espresso shot (~2.5 oz)
  • 1/2 cup maple syrup
  • 1/2 TBSP pure vanilla extract
  • 1/8 tsp cinnamon
  • 2 TBSP coconut oil

Instructions

  1. Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper or a non-stick mat.
  2. Whisk together espresso, maple syrup, vanilla, cinnamon, and coconut oil.
  3. Toss nuts in the glaze and let rest for 10 minutes.
  4. Using a slotted spoon, transfer nuts to the prepared pan in a single layer. Drizzle remaining glaze on top.
  5. Bake for 10 minutes, then stir gently and return to oven for another 7-10 minutes until toasted.
  6. Cool completely before serving. Store in an airtight container.
