Ingredients
2-3 ripe bananas
1/3 cup butter, melted
3/4 cup sugar (brown, white, or a mix — to taste)
1 large egg
1 tsp vanilla extract
1/2 tsp baking soda
Pinch of salt
1 1/2 cups flour
Pecans, chocolate chips, walnuts, etc. (optional, as wanted)
Instructions
Preheat oven to 350 F. Line a 12-cup muffin tin with liners or grease well.
Mash bananas thoroughly in a large bowl.
Stir in melted butter until combined.
Mix in sugar, egg, and vanilla.
Add baking soda and salt, stir to combine.
Fold in flour until just incorporated — do not overmix.
Fold in any optional mix-ins (chocolate chips, pecans, walnuts, etc.).
Divide batter evenly among muffin cups, filling each about 3/4 full.
Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
Cool in the pan for 5 minutes, then transfer to a wire rack.
