Ingredients

  • 2-3 ripe bananas
  • 1/3 cup butter, melted
  • 3/4 cup sugar (brown, white, or a mix — to taste)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1 1/2 cups flour
  • Pecans, chocolate chips, walnuts, etc. (optional, as wanted)

Instructions

  1. Preheat oven to 350 F. Line a 12-cup muffin tin with liners or grease well.
  2. Mash bananas thoroughly in a large bowl.
  3. Stir in melted butter until combined.
  4. Mix in sugar, egg, and vanilla.
  5. Add baking soda and salt, stir to combine.
  6. Fold in flour until just incorporated — do not overmix.
  7. Fold in any optional mix-ins (chocolate chips, pecans, walnuts, etc.).
  8. Divide batter evenly among muffin cups, filling each about 3/4 full.
  9. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a wire rack.
