- Prepare 1 pie crust as directed, set aside.
- Cut the other pie crust into thin slices for the lattice topping.
- Preheat the oven to 400 F.
- Peel, core, and slice the apples into thin, uniform slices.
- In a large bowl, combine apples, white sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Ensure apples are fully coated.
- Spoon the filling into the pie crust and pan, avoiding excess liquid.
- Lattice the pie crust topping over the pie.
- Brush the surface of the pie with a beaten egg.
- Cover the edges of the crust with tin foil for the first 25 minutes at 400 F.
- Remove the tin foil, turn the oven down to 375 F, and bake for an additional 30-35 minutes.
